At Home On Roam

Given the delay between, actual time of eating, to the time it hits the blog, it leaves just about enough room for nostalgia. The frugal scrooge that I’ve been (still am) the past couple of months have meant driving home from lunch, which, from looking of the pictures, doesn’t really look that bad.

Here’s Lunch, or what was lunch over a span of a couple days. Shrimp cooked Coconut Milk, with Calabasa (Pumpkiny almost), String Beans, and Chilis. Dinuguan (Pork Blood Stew), made up of all the good bits (Cheek, stomach, etc).


Half of the fun of taking the effort and posting food photos is describing dishes that are just foreign to other people. Not that I’ve foreign readers, its just that most of the time these photos go live on SuFu prior anything. Here’s my emphatic attempt at trying to describe Sopas.

Anticlimactically, we just call this Sopas. Chicken broth based soup, made with whatever pasta is available. Topped with forked chicken, chicken liver, and gizard (smoked sausage sometimes too), It’s served with a final douse of milk and Parmesan (and me, more pepper).

Up and about, I’d expect, and still am expecting that this latest bout of “frugality” is going to result in a food turn down. But, just from the looks of whats been on the meal plate as of late, it isn’t terribly bad. Then again, I don’t think the words terribly bad have ever existed in the same paragraph (be it space) as foie gras.

Dinner out, and picking something relatively simple. Foie Gras, and Mushroom Ravioli. Served in a cream, clarified butter and peppercorn sauce.


Here’s what I mean by frugal, Food Court Grub (carb on carb concept). Grilled Chicken with a Thai inspired Sweet Chili Sauce. That beside Mash Potatoes, Gravy, and a good pile of Pesto.


I think this meal personifies what I’m trying to say here (much better than foie gras filled pasta, imho). It’s not necessarily just cheaper food (which they clearly aren’t), but food that have value. A hundred pesos for carb and carb, three hundred for amazing ravioli. Value meals, in the truest sense. Least that’s from how I see it.

Mostly Beer Food

Lunch, and also the odd one out that day. Grilled Tanigue (Blue Marlin?) steaks. I’m often on the fence when it comes to fish. I don’t think I’ve ever heard myself saying.. “Ooh, I think I’m craving fish today.” Though the grilled sacks of roe did make these over the top, it’s still not enough to get a concrete spot in the Wants Department.

Dinner, in what supposedly was “Pre-Booze”, but then what the hell. Took the drive over to Charlie’s for Beer and Nuclear Wings (which lived up to its name, judging by the “Chernobyl” everyone had the next day). The food here is always good, long as you walk in without too many expectations.

There’s been Burger Horror stories, but me sticking to the poultry, have never ran into such. If anything, I can probably leave you a word of advice, spite how good that sauce looks, or how numb to the heat you already are, do not lop that stuff up with every bite. You’ll hate yourself for it.




Post Boozing Band Aid. Sangria, and Fries over at Wingman. Now here’s a place I haven’t sat down and eaten a meal at. Though there’s been a considerate amount of time spent over drinking out front, I’ve never really eased into anything past appetizers. But if the Fries, Quesadillas and Dips serve as any barometer, it should by all means be good.

One Too Many

Prior to anything else, (and prior to anything new) I’ve a Flickr full of photos that need to be posted up. Here’s me both mustering up the energy and removing any excuses for having been MIA for the last two weeks. The first item to come up should be plenty enough reminder for anyone, who knows, how long ago this is.


A Thursday night out, a buy-1-take-1 promo and a fortunate twist of “alcohol fate” left us having one too many of these. Cherry Beers (San Miguel Light, maybe some vodka, maybe some soda, and the cherry flavored stuff they use on snowcones).

Lunch Break with one of the most straightforward food concepts out there, Rice-In-A-Box. My order, Thai Stir Fry Chicken (My verdict? Probably never again).

Here’s something born out of consequence. Not that we need any more of a reminder, but I’m beginning to feel resigned at the thought that the traffic jams are just terrible here in Manila. Six Thirty, Seven at night, everyone is just at a mad (and hungry) dash to get home.

I’d even go as far to say that we’re on the fortunate end of the spectrum. Thrown in a roomful of impatient and starving people, a traffic jam would be the least of my worries. I started picking these up to tide me over prior to dinner. Au revoir “No Food in the Car” rule, Grilled Bratwurst (with a gratuitous amount of mayo and mustard).



And lastly, a late night snack. Looking at the photos I can’t even remember when this happened. Judging by the Sampling Platter (wont even bother trying to name it all), Kebabs, and the other times we’ve been here, It’s probably one of those nights. Drunk and hungry (not necessarily in that particular order either) instinctive autopilot takes over and brings us to this place.

It makes you wonder though. I’m probably fringing on rhetorical territory on asking, but what do they eat when they’re drunk (Middle Easterns?)? Shatfaced and drunk. Four in the morning. Anything that isn’t kebab-like is simply just the wrong answer.

Simpler Fare

Nothing very cohesive, just snaps of great meals taken in passing. Not so much a big epic dinner as it is really just everyday eats. Here we go..


Quick lunch at home, Sausage Rolls. Ever since trying it the first time, I’ve been a big fan of slow cooking Sausages. Five minutes a side on the lowest heat, cooks it perfectly and leaves enough room towards the end for a sear if you want it a bit crisp. Leaves enough time for caramelizing onions, red ones since that’s what we commonly keep in the pantry. Butter roll, and mayonnaise, reaching out to some sort of equatorial, South American parallelism, (wasn’t that a mouthful) to balance the flavors.


I wont ramble so long about the next few dishes as they’re pretty straight forward. Late night (let the traffic pass) dinner, Gekikara Ramen. They say that the soup is miso based, but I’d like to think, judging by the way it tastes, that its made of fire. Torture at it’s best, there’s enough of both spice heat and actual heat to satisfy all your masochistic inklings.

Desert, an order of Ichigo Ice split for two. And after that bowl of soup, its equal parts remedy and delicious.

Dinner the next day. Judging by the Lechon Macau (Pork Belly) and Wonton Soup, it must have been hellish.

Sporadic, More

In an attempt to mirror my SuFu WAYET (What Are You Eating Today), I can’t help but realize how it’s been anything but that. Funny how anonymity changes things. Where, midst total strangers, there somehow seems to be a lot more room for honesty to exist. That aside.. it’s all gravy, back to mirroring.


Siopao, or steamed bun (whatever you call it from where you come from). Left the somewhat essential hot sauce in the freezer, making for a sort of spicy popsicle number. Needless to say, my attempt at some sort of temperate (pseudo food gastro) contrast failed miserably.


On a trip out of town, I forgot to bring the camera on the dinner before so.. all I’ve to show for the great weekend of eats was some tidbits of what I had for our post lunch, lunch. In the search for something crispy.. Chicken Skin and Chicharon Bulaklak (Pork Flower Crackling? It’s the pigs large intestine methinks).


Back in town for something less fussy, operative word here being not so much less as it is fussy in this case. Curry Beef Pepper Rice from Pepper Lunch. Doesn’t this feel like is the ideal comfort food for such a rice-o-philic culture. The acoustics on this and on the two dishes above are amazing, ending the week with some sizzle to match all the pop.

Little Tokyo

A couple weeks ago, me and a couple friend/s had the chance to spend most of the day in Little Tokyo. Afloat, most of the day felt, least for me, like I was walking on my toes. I find myself unusually sympathetic to this place. It’s always felt somewhat homey. Whether that be because it is, or the particular choice of company, I can’t seem to distinguish.

Maybe it’s the faux Japanese architecture. Edo Style walkways serving as portal to an idealized Filipino interpretation of Japan (Great food, everyone speak-a Engrish). That or the twenty something strides it only takes. Each one seems well worth its weight in gold. Value being attributed to how far from everyday realities it takes you.

We sat there for awhile. Enough time for the glare of the afternoon sun to slowly recede into the evenings blues. For that day, I don’t think I could have any happier. Reason/s being..

Upon Revision


Day 1, Caramelized Red Onions, Mozarella, Lettuce, Sesame Bun, and a Patty Confit (gone wrong, overcooked).


Day 2, Caramelized White Onions, Chedar, Lettuce, Tomatoes, Sesame Bun, Soft Boil and a Medium Raw Patty.

Day 3, Caramelized Red Onions, Swiss Cheese, Tomatoes, Butter Roll Bun, Soft Boil and a Medium Raw Patty Confit.

Had at a pack of Prime Rib Burger Patties a week or two ago and ended up spending most of it progressively trying to make the recipe better. Much as I’d like to say this was me, autonomously moving, what we see here is largely a product of Food Channel conditioning. And, after a friend’s run-in with the David Chang cookbook that inspired the Soft Boil, I feel like I’ve arrived at something I can be pretty proud of serving to anyone.

Back of my head though, it makes me wonder if most of the people studying to be chefs are half as geeked and engrossed about food as your run of the mill Internet Food Fanatic? They must be, no? Otherwise, what’s the point? It isn’t an easy buck either. I’m just recounting the times I’ve eaten terrible food. I was incredibly pissed off when I went over with the first batch of Pattys, and serving it, didn’t really sit well to me. And, here you have the rare occasion where people serve crap, to people who actually pay for it.

Anyways, its something mind boggle worthy. There’s something personal about serving, feeding other people that it doesn’t make sense to serve something one wouldn’t be proud of. Then again, come the 20th time that day, I’m sure standards have a little room to wane.

Going back to the burger, it still isn’t done and named yet, and as much as I’d like to just attached the word Bukkake in front of it and capitalize, I wont. As for comments, even with the lack of any veg on the Day 03 Burger, I deem it to be the best. Not only was I able to serve and share it to family, but also a couple (quite literally) of close friends.

On A Sunday Afternoon

That’s Steak and Potatoes, a pot of Ginataan, Paella, frozen Gellato ice cream cake, and a Longanisa burger, in respective order, in case you need details to go along with your drool. Grown up in a family that loves to eat, its almost the norm to wake up on a Sunday morning with 6-8 things to eat greeting you at the dining table. Be it almost jaded by the fact of, one thing never ceases to amaze me, that come Tuesday, its all more or less likely done, eaten and gone.

All From The Above

Here’s what dinner over the weekend would roughly look in the Lotho household. Not so much a random potluck, its actually a very simple breakdown of more often than not 3 things. One, a household favorite. This more often than not will be something Spanish from the mum’s repertoire, Callos, Paella, and the sort.

Two, a request, usually placed by who ever is coming over. It’s dishes not typically had at a regular basis, but pretty damn desired with abandon as well. Choices would often range from something as Pinoy as Adobong Pusit, Kohol, Laing, and go as far off the reservation as Sukiyaki, Wagyu Burgers and Tacos.

Third, would be a guilty pleasure. Spent from a weekend on gorging, more often capped off with something as easy, cheap, simple and over the top as possible. For that purpose, we’ve a wad of possibly every imaginable food delivery in Makati, bundled brochures barely held by a frail rubber band next to the phone. Much as the family likes to repeat, it always seems to revert to this primal attraction to takeout pizza and Chinese food.

There was this debate before on where is it do you find the best Filipino food? And after a good hour of so and back and forths, it surprisingly didn’t come to rest at a high end eatery. It didn’t have any famous chef proponents, nor a Michelin star. And considering that the answer was home, it didn’t even have to travel very far.
